Le gâteau qui mousse
Revenons-en à nos ingrédients de tout à l'heure d'il y a quelques jours : il s'agissait de faire pour la première fois (la précision est importante) un guinness cake. Recette d'une amie, quelques suggestions de Kiki de Farnham pour compléter et c'est parti. mais alors, était-ce la levure, la bière, le bicarbonate ou le mélange ou encore les moules trop remplis ????????? Bref, y'en avait partout dans le four et autour des moules (étonnant d'ailleurs que l'alarme incendie ne se soit pas mise en route, rapport à la fumée très très présente pendant environ une bonne heure)
Et en bouche, ça donnait quoi ? Bien pas tout de suite en bouche. because le guinness cake a ceci de commun avec le christmas pudding : il doit vieillir un peu (une semaine avant dégustation!)
Mais c'est très très bon ; rien à voir avec de la pâtisserie fine mais un bon gâteau riche en saveurs. Avec du thé ou un stone fence en l'occurrence...
Je vous recommande donc cette expérience culinaire...
Prépa : 45 minutes
cuisson : 2 heures à th 4-5 ou 190°
Repos une semaine
125gr de beurre
250gr de cassonade
2 oeufs
250gr de farine
1/4 de cuill. à café de muscade râpée
300gr de raisins secs (macérés dans la guinness)
50gr de cerises confites
50gr d'écorce d'orange confite
50gr d'amandes ou de noix hachées
le jus d'1/2 citron
1 sachet de levure chimique + un peu de bicarbonate
1 canette de guinness
Travailler le beurre ramolli avec le sucre. Incorporer les oeufs entiers, la muscade, tous les fruits secs et confits, coupés en morceaux, le jus de citron et la levure alsacienne.
Ajouter la guinness de façon à obtenir une pâte juste coulante
Verser dans un moule
Cuire à feu doux (190°), pendant deux heures. Vérifier la cuisson (si ça colle pas à la lame du couteau, c'est qu'c'est bon)
Une fois cuit, et à la cuiller, verser un peu de guinness sur le gâteau
Laisser reposer 24h tel quel, puis envelopper le gâteau dans du papier alu
Laisser vieillir une semaine environ.
Et pour les puristes : (and for the purists !!!!)... No topping for me
Wholemeal Guinness Cake
This is a very good 'keeping' cake, as it stays nice and moist and seems to go a long way.

8oz (225g) margarine |
2 level teaspoons baking powder |
1 level teaspoon mixed spice |
1/4 pint (150ml) Guinness |
Pre-heat the oven to gas mark 2 (300F), 150C. |

Method
First
line the base and sides of a 71/2 inch or 8 inch (19 or 20 cm) deep
cake tin with greaseproof or silicone paper and brush the paper with
melted margarine.
Now, sieve
the brown sugar into a large bowl (sifting removes any hard lumps. Then
add the margarine and beat together until light and fluffy. Gradually
add the beaten eggs, a little at a time, beating well between each
addition.
Now combine the flour, baking
powder and mixed spice together, then carefully fold in the flour
mixture - about 2 tablespoons at a time - alternately with 2 tablespoons
of Guinness.
When all the stout and dry ingredients have been added, gently fold in the fruit,
nuts, grated orange peel and marmalade, then spoon th mixture into the
prepared tin. Level the top with the back of a spoon and sprinkle with
the demerara sugar and flaked amonds.
Now bake in the centre of the oven
for about 21/4-2/12 hours, or until the cake just shows signs of
shrinking away from the side of the tin and the centre feels firm and
springy. Remove the cake from the oven and leave it to cool for about 30
minutes before taking it out of the tin. When it's cool, wrap in
greaseproof paper or silicone paper and store in an airtight tin for a
few days before eating.
